If you feel that no one makes pâtés and terrines like the French, then your prejudices will
be confi rmed when you try Romy Cuisine’s range. Created using only free-range Welsh
produce, they are made by chef Guy Simon, who’s 100% French. |

The relatively smooth but resonantly fl avoured rabbit terrine – made with pork and a
judicious quantity of cognac, white wine and thyme – transports you immediately to the
French countryside. I’m certainly taking a jar when I go picnicking at Offa’s Dyke. Or
maybe I’ll take the soft rillette of mixed pork and duck or perhaps even a pigeon pâté
with its undertone of smoked bacon.
And if you want a ready meal, I was intrigued to fi nd that the company offers a beef
bourguignon – made with Welsh black beef of course. Based in Hay-on-Wye, you will
see Romy on sale at several of the surrounding farmers’ markets in the area. |
